4 large eggs
1 tablespoon olive oil
1/4 cup diced onion
1/4 cup diced bell pepper
1/4 cup diced tomato
2 tablespoons salsa (choose a low-carb, sugar-free option)
1/2 avocado, diced
Salt and pepper to taste
Fresh cilantro for garnish (optional)
In a medium bowl, beat the eggs until well combined. Set aside.
Heat the olive oil in a non-stick skillet over medium heat.
Add the diced onion and bell pepper to the skillet and sauté for about 2 minutes until they start to soften.
Add the diced tomato and salsa to the skillet and cook for another 1-2 minutes until the tomatoes are slightly softened.
