Ingredients

  • 1 medium apple, peeled and grated

  • 1/2 cup almond flour

  • 1/4 cup coconut flour

  • 1/4 cup unsweetened shredded coconut

  • 1/4 cup erythritol or stevia

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1 tsp vanilla extract

  • 1/4 cup coconut oil, melted

  • 1 tbsp fresh lemon juice

  • Pinch of salt

Directions

  1. Preheat the oven to 350F and line a baking sheet with parchment paper.

  2. In a mixing bowl, combine the grated apple, almond flour, coconut flour, shredded coconut, sweetener, cinnamon, nutmeg, and salt.

  3. Add in the vanilla extract, melted coconut oil, and lemon juice, and mix until a dough forms.

  4. Using your hands, shape the dough into cookies (about 8-10), and place them on the prepared baking sheet.

  5. Bake for 15-20 minutes or until golden brown on the edges. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
