Ingredients

  • 1 small boneless, skinless chicken breast

  • 1/4 cup almond flour

  • 1/2 teaspoon paprika

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 egg, beaten

  • Cooking oil spray (olive oil or avocado oil)

Directions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a shallow bowl, combine the almond flour, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

  3. Dip the chicken breast into the beaten egg, making sure it's coated evenly.

  4. Transfer the chicken breast to the almond flour mixture, pressing gently to adhere the coating to the chicken. Flip and repeat on the other side until the chicken is fully coated.

  5. Place the coated chicken breast on the prepared baking sheet. Lightly spray the top of the chicken with cooking oil spray.

  6. Bake the chicken in the preheated oven for about 20-25 minutes or until the internal temperature reaches 165°F (74°C) and the coating is crispy and golden brown.

  7. Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving.
