Ingredients

4oz filet, top sirloin or tenderloin

2 cups spinach

¼ cup red onion, thinly sliced

1 tomato, wedged

2 tbsp olive oil

2 tbsp red wine vinegar

sea salt and pepper, to taste

1 small shallot


Instructions

In a pan, add ½ tbsp olive oil and cook steak to desired degree of doneness. Season with sea salt and pepper, to taste and set aside.

2. Combine remaining 1 ½ tbsp olive oil, vinegar, shallot, sea salt, and pepper in a food processor or blender until mixture is almost smooth.

3. In a large bowl, mix together spinach, red onion and tomato. Toss with dressing.

4. Cut steak into thin slices and top salad. Season with sea salt and pepper, to taste.
