Salad

4 tomatoes, cut into ¼ inch thick slices (about 2lbs)

1 onion, thinly sliced and separated into rings

Sprig of Parsley

¼ tsp sea salt, or to taste

1 tbsp thinly sliced fresh mint

2 tsp chives, chopped


Vinaigrette:

4 tsp olive oil

4 tsp red wine vinegar

1 tsp mustard powder

½ tsp garlic, minced

Instructions

1. To prepare salad, alternate tomato and onion slices on a platter. Sprinkle with salt and top with mint and chives.

2. To prepare vinaigrette, combine all ingredients in a bowl, wisk and drizzle over salad and serve at room temperature.
