Ingredients

1 boneless, skinless chicken breast half

½ cup sweet onion, sliced

1 yellow pepper, sliced

1 orange pepper, sliced

1 clove garlic, minced

½ tsp allspice

½ tsp cinnamon

¼ tsp nutmeg

sea salt and pepper, to taste

olive oil cooking spray

Instructions

1. Combine all spices in a bowl.

2. Cut chicken into chunks and coat with spice mixture.

3. Cook on grill or saute in olive oil sprayed pan until done.

4. In a large olive oil sprayed pan, saute both peppers and onion. Season with sea salt and pepper.

5. Serve chicken on a bed of peppers and onions.
