Ingredients

4 oz shrimp

2 cups organic, no salt vegetable or homemade broth

1 lemongrass stalk

2-3 slices fresh ginger

red pepper flakes or cayenne pepper, to taste

1 tbsp green onion, minced

1 tbsp fresh cilantro, chopped

sea salt and pepper, to taste

Instructions

1. Bring broth to a boil.

2. Add ginger, lemongrass, lemon juice, onion, and pepper.

3. Simmer for 10-15 minutes.

4. Add the shrimp and cilantro and cook another 8 minutes. Remove lemongrass before serving.
