Ingredients

2 cloves garlic, minced

2 small zucchini, diced

2 cups cabbage, shredded

2 cups cauliflower

2 cups broccoli

1 medium onion, diced

1 medium red pepper, diced

1 rib of celery, diced

2 tsp fresh thyme, chopped

6 cups organic, no salt vegetable or homemade broth

2 tbsp fresh parsley, chopped

½ tsp sea salt

¼ tsp black pepper

2 tbsp fresh lemon juice

Instructions

1. Put garlic, vegetables, thyme and broth into large soup pot. Cover and bring to a boil over high heat; reduce heat to low and simmer, partially covered for about 10 minutes.

2. Stir in parsley or chives; season to taste with sea salt, pepper, and lemon juice.
