Ingredients

  • 2-3 big cabbage leaves

  • 1 cup shredded cabbage

  • Dash of onion powder

  • Dash of garlic powder

  • ½ packet of stevia

  • ½ container firm or extra firm tofu, pressed and cubed

  • Dash of Chinese Five-Spice powder

  • Olive oil cooking spray

Directions

  1. Preheat your oven to 375°F (190°C).


  2. In a skillet, heat some olive oil cooking spray over medium heat.


  3. Add the shredded cabbage and cook for a few minutes until slightly softened.


  4. Add the cubed tofu to the skillet and season with the onion powder, garlic powder, Chinese Five-Spice powder, and stevia. Stir well to coat the tofu and cabbage with the spices. Cook for an additional 2-3 minutes until the tofu is heated through.


  5. Remove the skillet from heat and let the filling mixture cool for a few minutes.


  6. Take the big cabbage leaves and gently steam or blanch them in boiling water for a minute or two until they become pliable. This will make it easier to roll the egg rolls.


  7. Lay the steamed cabbage leaves on a flat surface. Place a portion of the tofu and cabbage filling in the center of each leaf.


  8. Fold the sides of the cabbage leaves over the filling, and then roll the leaves tightly from the bottom to the top, creating a roll.


  9. Place the tofu egg rolls on a baking sheet lined with parchment paper or sprayed with olive oil cooking spray.


  10. Lightly spray the tops of the egg rolls with olive oil cooking spray to help them crisp up.


  11. Bake the egg rolls in the preheated oven for about 20-25 minutes, or until they become golden brown and crispy.


  12. Once the tofu egg rolls are done baking, remove them from the oven and let them cool slightly.
