2 medium-sized cucumbers, thinly sliced
1 tablespoon sea salt
1/2 cup apple cider vinegar
2 tablespoons chopped fresh dill
1 tablespoon granulated stevia or monk fruit sweetener
1/2 teaspoon ground black pepper
1/4 teaspoon garlic powder
Directions
Place the thinly sliced cucumbers in a colander or strainer and sprinkle them with sea salt. Toss the cucumbers to evenly coat them with salt. Let them sit for about 15 minutes to allow excess moisture to drain.
After 15 minutes, rinse the cucumbers under cold water to remove the salt. Pat them dry with a paper towel and transfer them to a bowl.
In a separate bowl, combine the apple cider vinegar, chopped fresh dill, granulated stevia or monk fruit sweetener, ground black pepper, and garlic powder. Whisk the mixture together until the sweetener dissolves and the ingredients are well combined.
Pour the sweet and sour mixture over the sliced cucumbers. Toss the cucumbers gently to coat them with the dressing.
Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld. For best results, refrigerate for 4-6 hours or overnight.
