Ingredients

  • 4oz filet, top sirloin or tenderloin

  • 2 cups spinach

  • ¼ cup red onion, thinly sliced

  • 1 tomato, wedged

  • 2 tbsp olive oil

  • 2 tbsp red wine vinegar

  • sea salt and pepper, to taste

  • 1 small shallot


Directions

  1. Season the filet with salt and pepper on both sides.

  2. Heat a grill pan or skillet over medium-high heat and add 1 tablespoon of olive oil.

  3. Once the oil is hot, add the filet to the pan and cook for about 4-5 minutes per side for medium-rare, or adjust the cooking time according to your preferred level of doneness.

  4. Once cooked to your liking, remove the steak from the pan and let it rest for a few minutes.

  5. While the steak is resting, prepare the salad dressing. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, red wine vinegar, and a pinch of salt and pepper.

  6. Thinly slice the shallot and add it to the dressing. Mix well to combine.

  7. In a large salad bowl, combine the spinach, red onion, and tomato wedges.

  8. Drizzle the dressing over the salad and toss to coat the ingredients evenly.

  9. Slice the rested steak into thin strips.

  10. Arrange the steak slices on top of the spinach salad.

  11. Season the salad with additional salt and pepper if desired.

  12. Serve the steak and spinach salad immediately.
