Ingredients

  • 1 lb raw shrimp, peeled and deveined

  • 2 medium zucchinis, spiralized into noodles

  • 2 cloves garlic, minced

  • 1/2 onion, chopped

  • 1 can diced tomatoes (14 oz)

  • 1/4 cup chicken or vegetable broth

  • 1 tbsp olive oil

  • Salt and black pepper to taste

  • Fresh parsley, chopped (optional)

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the garlic and onion and sauté until the onion becomes translucent, about 3 minutes.

  2. Add the diced tomatoes and broth to the skillet and let it simmer for about 5 minutes.

  3. Add the shrimp to the skillet and cook until they turn pink, about 5 minutes.

  4. While the shrimp is cooking, spiralize the zucchini into noodles using a spiralizer or a vegetable peeler.

  5. Once the shrimp is cooked, add the zucchini noodles to the skillet and toss with the tomato sauce until the zucchini noodles are cooked to your desired texture, about 3-5 minutes.

  6. Season with salt and black pepper to taste and garnish with fresh parsley, if desired.
