Ingredients

  • 1 lb turkey breast, boneless and skinless

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon smoked paprika

  • Salt and pepper to taste

  • 4 cups mixed salad greens (spinach, arugula, and watercress work well)

  • 1 cup cherry tomatoes, halved

  • 1/2 cucumber, sliced

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup feta cheese, crumbled

  • 2 tablespoons balsamic vinaigrette dressing (sugar-free)

Directions

  1. Preheat your oven to 375°F (190°C).

  2. In a small bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper to create a marinade.

  3. Rub the turkey breast with the marinade, ensuring it's well coated.

  4. Place the turkey breast in a roasting pan and roast in the preheated oven for about 25-30 minutes or until the internal temperature reaches 165°F (74°C).

  5. Let the turkey rest for 10 minutes before slicing it into thin, even pieces.

  6. In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, red onion, and feta cheese.

  7. Arrange the sliced turkey over the salad and drizzle with balsamic vinaigrette dressing.

  8. Toss gently to combine all the ingredients.
