Ingredients

  • 4 bell peppers, halved and seeded

  • 1 pound ground beef (preferably grass-fed)

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 can (14.5 oz) diced tomatoes

  • 1/4 cup chopped kalamata olives

  • 1 tablespoon chopped fresh oregano

  • 1 tablespoon chopped fresh parsley

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon black pepper

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup crumbled feta cheese

Directions

  1. Preheat oven to 375°F (190°C).

  2. In a large skillet over medium heat, cook ground beef, onion, and garlic until beef is browned and onion is tender.

  3. Add diced tomatoes (with juice), olives, oregano, parsley, salt, and pepper to the skillet. Cook for 5-10 minutes, stirring occasionally, until the mixture is heated through and the flavors are well combined.

  4. Arrange the bell pepper halves in a baking dish. Spoon the beef mixture into the pepper halves, filling them to the top.

  5. Sprinkle Parmesan cheese and feta cheese over the top of each pepper.

  6. Bake in preheated oven for 30-35 minutes, or until the peppers are tender and the cheese is melted and lightly browned.
