Ingredients

  • 1/2 lb lean ground beef

  • 1/4 cup almond flour

  • 2 tablespoons grated Parmesan cheese

  • 2 tablespoons chopped onion

  • 1 clove garlic, minced

  • 1/2 egg, lightly beaten (use the other half for another purpose)

  • 1/2 tablespoon Worcestershire sauce

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon dried rosemary

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon salt

  • 1/8 teaspoon black pepper

  • 1/4 cup sugar-free ketchup

Directions

  1. Preheat your oven to 350°F (175°C).

  2. In a mixing bowl, combine the ground beef, almond flour, Parmesan cheese, chopped onion, minced garlic, half an egg, Worcestershire sauce, dried thyme, dried rosemary, smoked paprika, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.

  3. Shape the mixture into a small loaf shape, approximately 4-5 inches long.

  4. Place the meatloaf on a baking sheet or in a loaf pan.

  5. Spread the sugar-free ketchup evenly over the top of the meatloaf.

  6. Bake in the preheated oven for about 35-40 minutes or until the internal temperature reaches 160°F (71°C).

  7. Once cooked, remove the meatloaf from the oven and let it rest for a few minutes.

  8. Slice and serve the meatloaf with your choice of sides.
