Ingredients
8 ounces top sirloin, ground (or chicken breast, ground)
1 cup Pomi chopped or crushed tomatoes (or puree if using chopped tomatoes)
1 teaspoon ground oregano
½ yellow onion, finely chopped
1 tablespoon chili powder
½ green bell pepper, finely chopped
½ teaspoon ground oregano
1 clove garlic, chopped
¼ teaspoon cayenne powder (or chipotle powder)
½ teaspoon ground cumin
¼ teaspoon smoked paprika
½ teaspoon olive oil
¼ teaspoon salt (to taste)
Directions
Heat the olive oil in a pot or skillet over medium heat.
Add the chopped onion and garlic to the pot, and sauté until they become translucent and fragrant.
Add the ground sirloin (or ground chicken) to the pot, and cook until browned, breaking it up into smaller pieces with a spatula or spoon.
Stir in the chopped green bell pepper and continue cooking for a few minutes until it starts to soften.
Add the chili powder, ground oregano, ground cumin, smoked paprika, cayenne powder (or chipotle powder), and salt. Mix well to evenly distribute the spices.
Pour in the chopped or crushed tomatoes (or tomato puree), and stir to combine everything thoroughly.
Reduce the heat to low, cover the pot, and let the chili simmer for about 30-40 minutes, stirring occasionally.
Taste and adjust the seasoning if needed, adding more salt or spices according to your preference.
Once the chili has thickened and the flavors have melded together, remove it from the heat.
Serve the Lou's Chili hot in a bowl, and garnish with your favorite toppings such as shredded cheese, sour cream, chopped green onions, or cilantro.
