Ingredients

4 Italian turkey sausages, casings removed

6 large eggs

Salt and pepper to taste

1 tablespoon olive oil

1 medium bell pepper, diced

1 medium onion, diced

1 clove garlic, minced

1/4 cup grated Parmesan cheese

Fresh basil or parsley for garnish

Directions

  1. Heat a large skillet over medium heat. Add the Italian turkey sausages and cook, breaking them up into small pieces, until they are browned and fully cooked through. Remove the sausage from the skillet and set aside.

  2. In the same skillet, add the olive oil, diced bell pepper, and onion. Sauté until they begin to soften, about 5 minutes.

  3. Add the minced garlic to the skillet and sauté for another minute until fragrant.

  4. While the vegetables are cooking, in a medium bowl, whisk together the eggs, salt, and pepper.

  5. Pour the beaten eggs into the skillet over the sautéed vegetables. Allow the eggs to cook without stirring for a few seconds until they start to set around the edges.

  6. Stir the eggs gently, folding them over to allow the uncooked eggs to flow underneath. Continue cooking until the eggs are mostly cooked but still slightly runny.

  7. Add the cooked sausage back into the skillet and stir gently to combine with the scrambled eggs and vegetables. Continue cooking for another minute or two until the eggs are fully cooked and the sausage is heated through.

  8. Sprinkle the scramble with grated Parmesan cheese and fresh basil or parsley for garnish.
