Ingredients

  • 2 rainbow trout fillets (about 4-6 ounces each)

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • 1 lemon, sliced

  • For the Lemon Herb Butter:

    • 2 tablespoons unsalted butter, softened

    • 1 tablespoon fresh lemon juice

    • 1 teaspoon fresh thyme leaves, chopped

    • 1 teaspoon fresh parsley, chopped

    • 1 clove garlic, minced

  • For the Green Beans:

    • 8 ounces fresh green beans, trimmed

    • 1 tablespoon olive oil

    • 2 cloves garlic, minced

    • Salt and pepper to taste

Directions

  1. Preheat your grill to medium-high heat.

  2. In a small bowl, combine the softened butter, lemon juice, thyme, parsley, and minced garlic. Mix well to combine. Set aside.

  3. Brush the rainbow trout fillets with olive oil and season with salt and pepper on both sides. Place a few lemon slices on top of each fillet.

  4. In a large bowl, toss the green beans with olive oil, minced garlic, salt, and pepper.

  5. Place the trout fillets on the preheated grill, skin side down. Cook for about 4-6 minutes per side, or until the fish flakes easily with a fork and is opaque in the center. Remove from the grill and set aside.

  6. While the trout is grilling, prepare the green beans. Heat a large skillet over medium heat. Add the green beans and cook for 5-7 minutes, or until they are tender-crisp. Stir occasionally to prevent burning. Season with salt and pepper to taste.

  7. Serve the grilled rainbow trout fillets with a dollop of lemon herb butter on top. Serve the green beans on the side.
