2 rainbow trout fillets (about 4-6 ounces each)
1 tablespoon olive oil
Salt and pepper to taste
1 lemon, sliced
For the Lemon Herb Butter:
2 tablespoons unsalted butter, softened
1 tablespoon fresh lemon juice
1 teaspoon fresh thyme leaves, chopped
1 teaspoon fresh parsley, chopped
1 clove garlic, minced
For the Green Beans:
8 ounces fresh green beans, trimmed
1 tablespoon olive oil
2 cloves garlic, minced
Salt and pepper to taste
Directions
Preheat your grill to medium-high heat.
In a small bowl, combine the softened butter, lemon juice, thyme, parsley, and minced garlic. Mix well to combine. Set aside.
Brush the rainbow trout fillets with olive oil and season with salt and pepper on both sides. Place a few lemon slices on top of each fillet.
