Ingredients

- 1 pound large shrimp, peeled and deveined

- 1 bunch asparagus, tough ends trimmed

- 2 tablespoons olive oil (organic, if possible)

- 3 cloves garlic, minced

- Zest and juice of 1 lemon

- 1 teaspoon dried oregano

- Salt and pepper, to taste

Directions

 

1. Preheat the grill to medium-high heat.

 

2. In a bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and pepper. Mix well.

 

3. Place the shrimp in a separate bowl and pour half of the marinade over them. Toss to coat the shrimp evenly.

 

4. Brush the trimmed asparagus with the remaining marinade.

 

5. Thread the marinated shrimp onto skewers.

 

6. Place the shrimp skewers and asparagus on the preheated grill. Cook the shrimp for about 2-3 minutes per side, until they turn pink and opaque. Grill the asparagus for about 5-7 minutes, turning occasionally, until they are tender-crisp and slightly charred.

 

7. Once cooked, remove the shrimp and asparagus from the grill.

 

8. Serve the grilled shrimp alongside the asparagus and enjoy your delicious and nutritious meal.
