2 boneless, skinless chicken breasts, cut into 1-inch pieces

1 medium zucchini, cut into 1/2-inch rounds

1 bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

2 tablespoons of olive oil

1 tablespoon of lemon juice

2 cloves of garlic, minced

1 teaspoon of dried oregano

Salt and black pepper to taste

Wooden skewers, soaked in water for at least 30 minutes


  1. In a large bowl, mix together olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken pieces, toss to coat, and marinate for at least 30 minutes.

  2. Preheat your grill to medium-high heat.

  3. Thread the chicken, zucchini, bell pepper, and red onion onto the skewers, alternating as you go.

  4. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is fully cooked and the vegetables are tender and slightly charred.

  5. Remove from the grill and allow to rest for a few minutes before serving.
