4 boneless, skinless chicken breasts, cut into cubes
1 large cucumber, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, diced
1/4 cup fresh parsley, chopped
1/4 cup fresh lemon juice
1 tablespoon olive oil
1/2 teaspoon dried oregano
Salt and pepper, to taste
1/2 cup tzatziki sauce, for serving
Preheat the grill or a grill pan to medium-high heat.
In a large mixing bowl, toss the cubed chicken with olive oil, dried oregano, salt, and pepper.
