Ingredients

  • 1 lb boneless, skinless chicken thighs, shredded

  • 1 cup sliced mushrooms

  • 1 cup chopped celery

  • 1 cup chopped carrots

  • 1 medium-sized onion, chopped

  • 2 cloves garlic, minced

  • 6 cups chicken broth or homemade vegetable broth

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 tsp dried oregano

  • 1 tsp paprika

  • 1 bay leaf

  • Sea salt and black pepper, to taste

  • 2 tbsp olive oil

Directions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the chopped onions, garlic, mushrooms, celery, and carrots. Sauté for 5-7 minutes until the vegetables soften.

  2. Add the shredded chicken, chicken broth, dried thyme, rosemary, oregano, paprika, bay leaf, sea salt, and black pepper. Bring the soup to a boil, then reduce the heat to low and simmer for 20-30 minutes until the vegetables are tender.

  3. Remove the bay leaf and discard.

  4. Serve hot and enjoy your delicious and healthy low carb chicken soup.
