1 lb boneless, skinless chicken thighs, shredded
1 cup sliced mushrooms
1 cup chopped celery
1 cup chopped carrots
1 medium-sized onion, chopped
2 cloves garlic, minced
6 cups chicken broth or homemade vegetable broth
1 tsp dried thyme
1 tsp dried rosemary
1 tsp dried oregano
1 tsp paprika
1 bay leaf
Sea salt and black pepper, to taste
2 tbsp olive oil
In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the chopped onions, garlic, mushrooms, celery, and carrots. Sauté for 5-7 minutes until the vegetables soften.
Add the shredded chicken, chicken broth, dried thyme, rosemary, oregano, paprika, bay leaf, sea salt, and black pepper. Bring the soup to a boil, then reduce the heat to low and simmer for 20-30 minutes until the vegetables are tender.
Remove the bay leaf and discard.
