Ingredients

1 large cauliflower head

1 large egg

1.5 cups shredded mozzarella cheese

1/2 cup grated parmesan cheese

1 teaspoon dried oregano

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup pizza sauce (choose a low-sugar brand)

1/2 cup pepperoni slices

Additional toppings as desired (bell peppers, olives, mushrooms, etc.)

Fresh basil for garnish (optional)


Now you can either choose to purchase a pre-baked cauliflower pizza crust or make your own. The two brands that we like are 365 Everyday Value Pizza Crust and Outer Aisle Plantpower Pizza Crust.

Directions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. Wash and dry the cauliflower, then cut it into florets. Pulse the florets in a food processor until the texture resembles rice.

  3. Microwave the cauliflower rice for 5-7 minutes until softened. Alternatively, you can steam it on the stovetop.

  4. Allow the cauliflower rice to cool, then transfer it to a clean kitchen towel and wring out any excess moisture.

  5. In a large bowl, combine the drained cauliflower, egg, 1 cup of mozzarella, parmesan, oregano, garlic powder, salt, and pepper. Mix well.

  6. Spread the mixture on the prepared baking sheet, shaping it into a pizza crust about 1/3 inch thick.

  7. Bake the crust for 12-15 minutes or until golden and crisp at the edges.

  8. Remove the crust from the oven and spread the pizza sauce evenly on top. Sprinkle with the remaining mozzarella cheese, then arrange the pepperoni slices and other toppings as desired.

  9. Return the pizza to the oven and bake for another 10-12 minutes or until the cheese is melted and bubbly.

  10. If you like, garnish with fresh basil leaves before slicing and serving. Enjoy your delicious and healthy cauliflower pepperoni pizza!
